Ingredients
2 tbsp.
extra-virgin olive oil
1/2
Onion, finely chopped
4 oz.
mushrooms, finely chopped
kosher salt
Freshly ground black pepper
1 tsp.
chopped thyme
1 tsp.
chopped sage
1 tsp.
chopped rosemary
3 tbsp.
all-purpose flour
3 c.
vegetable stock
Directions
  1. Heat olive oil in a small saucepan over medium heat. Add onion and sauté until beginning to soften. Stir in mushrooms and herbs. Season with salt and pepper. Cook until soft, about 5 minutes. Add flour and cook for 1 minute.
  2. Pour in 2 cups of vegetable stock and whisk to combine. Bring to simmer and cook for 5-10 minutes, until the flavors have melded and the mixture has thickened slightly. If the mixture is too thick, gradually add more vegetable stock.
  3. Serve warm.
