I don’t know if you’ve heard, but Moscow Mules — the ginger beer, lime and vodka drink — are super popular these days. They’ve got the perfect balance of sweet, spicy, and citrusy flavors. They’re served in beautiful copper cups and if you ask me they go down a little too easy. (Okay sure, they *might* have given me a hangover or two.)
As we are want to do, we had to make a boozy cupcake to honor our new favorite cocktail. And with a simple boxed cake hack, it could not be easier. Here’s how you do it: add one can of ginger beer to boxed white cake mix and whisk together until no lumps remain. Next: well, there is no next. That’s it! A can of soda + cake mix = super fluffy cupcakes. Don’t ask why — just try it for yourself!
If you want to kick the ginger flavors up a notch, add some ground ginger to your cake batter. It adds a nice pop of flavor, not unlike the real thing! We added some kick to our buttercream as well with the addition of lime juice and zest. Garnish them with a wedge of lime and a sprig of mint, and you’ll have the trendiest cupcakes at the party.
