Murray’s Cheese didn’t set out to become brides’ first stop in the wedding planning process; their customers made it that way. “People started coming in with pictures from Pinterest of layer cakes made out of wheels of cheese and asking if we’d make one for them,” explained catering manager Leigh Power. “Apparently, they’re big in England, and we thought, ‘why not?!'”
The New York City-based shop sells roughly 350 types of cheese at any given time, so its team got to work, looking for cheeses of the right size, shape, and flavor profiles to fit couples’ style. Typically, they ask about the couples’ favorite cheeses, treating it like building a cheese plate, while also determining just how many servings they’d need — and the right colors — so it looks as close to a traditional cake as possible.

“People love brie, but traditional French brie tends to be really short and flat, and it doesn’t look right. Some people come in and want the parmesan wheel” — Power said, pointing to a wheel the size of a car tire — “but that’s 90 pounds of cheese. Most weddings don’t need that much parm.”
After making the first few, word of mouth spread, and the cake alternative became so popular that Murray’s started offering its own line of signature towers, with four options to choose from. Out of the four, Celebration In Bloom is the bestseller, since its four classic white-rinded cheeses stack up and create what looks — at first glance — most like a classic cake.
“We’ll coordinate with the wedding planner and florist to get flowers or ribbons that match the bride and groom’s theme,” Power explained. That finishing touch is what really makes the tower look Biggest-Day-Of-Your-Life-worthy.
Even if you don’t have any plans to get hitched in say, the next five to 10 years, you’re not without hope: The shop also sells a two-person tower for $75. Proof that you should never let anything — like a ring or a proposal — hold you back from living out your dreams. No matter how cheesy they are.
